1. In a medium bowl, whisk together the eggs and pepper.
2. Heat the oil in a large skillet over medium-low heat. When the oil is shimmering, pour the egg mixture into the center of the skillet. Cook the eggs, using a rubber spatula to push them gently from the edges into the center of the skillet, until they are almost set, 2 to 3 minutes.
3. Stir in the salmon and green onions, cooking until eggs are cooked through, an additional 1 to 2 minutes. Serve immediately.
