Aunt Sis’s Tomato Sandwich
Slice the tomato horizontally into two slices between ¼ and ½ inch thick. Core and chop the remaining tomato into small pieces. Spread the mayonnaise on two of the slices of brioche, then center a tomato slice smack-dab in the middle of the mayo. Place smaller pieces of tomato on any empty bread real estate. Season with salt and pepper. Top with a second slice of bread. Eat immediately and with someone you love.
